Job Summary:

The Catering Chef – Lakeview Lodge (Summer Seasonal) is responsible for leading all culinary operations for catered events, weddings, and group dining at Lakeview Lodge. This role oversees all back‑of‑house (BOH) kitchen operations and works closely with the Lakeview Lodge General Manager to ensure a seamless, high‑quality, safe, and memorable experience for every guest.

The Catering Chef will plan menus, prepare food at a high standard, supervise culinary staff, maintain inventory, and ensure all events are executed with efficiency and excellence. This position requires creativity, professionalism, and strong leadership in a fast‑paced, high‑volume environment.

Job Responsibilities:

Key duties include, but are not limited to:

Culinary Leadership & Execution

  • Lead all BOH culinary operations for catered events, banquets, and group services at Lakeview Lodge.
  • Ensure consistent, high‑quality food preparation, presentation, and service aligned with Vail Resorts standards.
  • Oversee event culinary timelines, execution, and coordination with front‑of‑house (FOH) event staff.
  • Develop, refine, and execute seasonal catering menus that meet guest expectations and operational needs.

Team Management & Training

  • Supervise BOH culinary staff, including cooks, prep staff, and dish team.
  • Train employees on recipes, cooking techniques, safety procedures, and service standards.
  • Promote a strong team culture through clear communication, accountability, coaching, and regular feedback.

Operational Oversight

  • Manage kitchen organization, cleanliness, equipment readiness, and overall food safety compliance.
  • Execute daily commissary production orders and support other lodges or outlets as business demands.
  • Maintain accurate completion of daily paperwork, including kitchen audits, logs, checklists, payroll accuracy, and safety documentation.
  • Oversee kitchen readiness for multiple events per week, ensuring efficiency and consistency.

Financial & Inventory Management

  • Control food costs, waste, and labor within established budget goals.
  • Order, receive, and inspect food deliveries, working closely with the F&B Warehouse team.
  • Maintain appropriate inventory levels based on event volume and seasonal needs.

Safety & Compliance

  • Maintain a safe and compliant kitchen environment at all times.
  • Ensure adherence to Vail Resorts safety policies, local health regulations, and industry standards.
  • Lead by example in creating a safety-first culture, including proper PPE usage, food handling, and equipment operation.

Guest Service & Collaboration

  • Work directly with FOH management, event coordinators, and the Lakeview GM to ensure smooth event execution.
  • Quickly adapt to changing event needs, special requests, or operational challenges.
  • Represent the culinary team professionally and support seamless event experiences for all guests.

Job Requirements:

Required

  • 3–5 years of culinary management or supervisory experience in a high-volume banquet, catering, or restaurant environment
  • Strong culinary skills, menu execution experience, and ability to lead production for large-scale events
  • Excellent communication, leadership, and team-building abilities
  • Intermediate computer skills (Word, Excel, Outlook)
  • Current CA Food Handler Permit and ServSafe Certification
  • RBS Certification required
  • Availability on weekends, evenings, and holidays
  • Ability to work at high altitude and in varying summer mountain conditions

Preferred

  • Experience in large-scale resort or event catering environments
  • Previous experience at a Vail Resorts property

The expected pay range is $25.00/hr - $30.15/hr. This is the pay range we reasonably expect to pay for this position. Individual compensation decisions are based on a variety of factors.
